Harvest
Never harvest more than half of the stalks and leave the small leaves on the rhubarb plant. From the longest day (21 June) the oxalic acid gradually returns to the stalk through the leaves. It is therefore advisable not to harvest after this period. This way your rhubarb plant can also regain sufficient strength against the winter.
